About the Business
Charcoal is a small catering company run by chef James Horrigan. James is a local boy that has had a passion for food for as long as he can remember. His early culinary career saw him heading up the kitchens of some of Westons best restaurants from 'The Thatch' to 'The Commodore Hotel'. And so Charcoal was born. All the meats he uses are supplied by Ellises Farm and are all free range and GM free. They are then cooked and smoked the old fashioned way over coals and lovingly prepared using a variety of homemade rubs and sauces.
