Paella represents the heart of Spanish food culture we Brits love: it's about bringing people together on a small or grand scale, being loud and proud, enjoying a wholesome, nourishing and delicious meal without fussing about mess or table manners. Paella is not often thought of as fine dining but it is absolutely the best dinner party dish for host and guests: you can make it as simple or as complicated as you please and after all the preparation is done, the cooking of it in the one pan is a theatrical event that takes roughly 25 mins. Then the simmering for another 25 mins allows you to relax with your guests. When it's ready, you can bang it down in the centre of the table and there it is for everyone to dig into and enjoy. This would be one of those moments where you can justifiably pummel your chest and give a proud roar if you so wish.
