Tom began his career working with chef and award-winning food writer, Sybil Kapoor. In 1984, Tom became head chef at the Victoria and Albert Museum in London and was responsible for exhibition launchparties and banqueting for eminent guests such as Princess Michael of Kent and Sir Roy Strong.
